Like a diamond cutter who knows the value of rough stones, the seven pioneers of the St Martin adventure recognized the magic of the immense limestone rock located downstream from the town of Remich. In this place of wild beauty, Eugène Koch, Jean Faber, Eugène Knepper, J.P. Hartmann, Pierre Wurth, Jean Beissel and Mathias Ley carved into the yellow stone the history of Luxembourg sparkling wines. In 1919, in the aftermath of the First World War, they founded Caves St Martin there.
From their vision were born the underground galleries, carved into this immense limestone massif between 1919 and 1921, where even today the masters of the vine practice the ancestral ritual of winemaking and sparkling wine production. Even Bacchus himself could not have resisted the enchanting appeal of these galleries dedicated to delighting the palate, where thousands of bottles of this delicious nectar, produced according to the traditional method taught by the Benedictine monk Dom Pérignon, rest.
