          How to choose your bread?

          choisir son pain

Among the foods we consume the most, bread ! Moreover, there are more and more different varieties within bakeries and supermarkets. How to choose not to be disappointed? Is there anything to keep it longer? We tell you more!

White bread is the most classic, made of wheat flour, yeast, salt and water. The leavened one is also one of the best-selling and is, as its name suggests, sourdough (in addition to the basic ingredients mentioned above). Once in the mouth, you will see that it has a slight hint of acidity. The same is true if you consume country bread . The latter is fermented in such a way that it can be kept longer than the other varieties.

Complete breads are made from whole wheat flour. Also called integral flour, it comes from the whole grain of wheat, which means that they contain many fibers and minerals. If you buy it, it's better to take a bio: since all grain is used, you will avoid additives and pesticides.

Halfway between the whites and the complete, the semi-complete loaves : the color of their crumb, cream, is due to the classic and complete flour mixture.

More and more in the shelves, special breads , which may contain seed mixtures (squash, flax, etc.) and cereals, but also pieces of fruit or vegetables (figs, dried tomatoes, etc.).

          4 criteria to consider

          A beautiful form

And it does not matter whether it's round, oval or square. To the eye, you will see directly whether or not it comes from an industrial production.

The same goes for the baguette: pointed ends (and not round), are synonymous with homemade.

          The crust

Crispy to perfection, it should not be too thick, and crack very slightly when touched.

          The crumb

If you opt for a white bread, it must be cream in color. That leavened bread and multi-cereals should, she, be light brown.

Its texture must be soft, but must also have consistency when you chew. On the other hand, it is of poor quality if it is too sticky or, on the contrary, strewn with holes.

          The weight

In supermarkets, you will be able to under-weigh bread. The more it will be heavy, the better it will be. If it is too light, while its size is bulky, it is because it was too kneaded or that it was made with flour too white.

          The trend of "gluten-free"

Today, supermarkets and bakeries are increasingly offering products that do not contain gluten.

For people who are intolerant, it is advisable not to consume wheat, which contains a lot of gluten.

In this case, to be able to eat bread, wheat flour can be replaced by corn or rice . If you are not allergic to it, you can opt for a spelled or kamut bread .

Note that according to specialists, wheat can also be the cause of other ailments such as anemia, joint pain, kidney stones, or even fertility problems.

          To make one's own bread?

If you consume often, this is the solution because it will be cheaper. What's more, you can make exactly the bread you want (we give you the basic recipe here ). However, it will inevitably take longer than if you move to a store to buy one.

          Keep your bread longer

Keep it in the bread bag in which it was sold to you, or in a completely sealed bread box . By cons, forget the plastic bag.

If you choose the "bread box" option, we advise you to slip in an apple cut in two pieces. This trick will allow your slices to dry less quickly.

To avoid having to waste, think also to freeze several portions of bread, that you will be able to leave as the freezer, according to your desires.
